Recipe for protein “Oreo” cookies:
For the cookies: 3–4 tbsp raw cacao powder, 3–4 tsp rice protein powder, 2 tbsp sesame tahini, 5–6 raw pitted dates.
For the filling: 1–2 raw pitted dates, 1 tbsp coconut flour, 3 tbsp coconut or almond milk, 1–2 tbsp rice protein powder, 1 tbsp coconut oil.

Preparation: Blend all cookie ingredients until smooth. Shape into balls, flatten, and bake on baking paper for about 10 minutes at 190°C. For the filling, mix and blend all ingredients well. Spread between two cookies to form sandwiches.
